Around the lake shores where the Salty Siren scientists roam, lives two species of pickleweed. Salicornia rubra, or “Red Swampfire,” turns a beautiful red in the fall and colors the wetlands. Salicornia utahensis stays vivid green. Both collect salt in the storage compartments of older cells, leaving the younger cells to do photosynthesis. This is why the plant tastes salty like pickles. Next time you see Great Salt Lake weed, have a taste! Celebrate Utah's local weed with this unique tea towel. Illustrated and designed by @petportraitsbysky!
